Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts/Thighs Turkey can be used as a substitute.
  • to taste Salt
  • to taste Pepper
  • to taste Fresh Thyme/Rosemary Dried herbs can be used if fresh isn’t available.
For the Sauce
  • 2 tablespoons Olive Oil Can be substituted with vegetable oil.
  • 3 cloves Minced Garlic Fresh is preferred, but garlic powder works.
  • 2 cups Fresh Cranberries Thawed frozen cranberries can be used.
  • 1 cup Orange Juice Fresh-squeezed is best, store-bought is fine.
  • zest of 1 Orange Zest Can be omitted if not available.
  • 2 tablespoons Honey/Maple Syrup Brown sugar can also work.
  • ½ cup Chicken Broth Use low-sodium or vegetable broth for a lighter option.

Cooking Instructions
  1. Rub the chicken with salt, pepper, and herbs. Marinate for 30 minutes if possible.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4-6 minutes on each side until golden brown. Remove and set aside.
  3. Lower the heat and add more olive oil if needed. Sauté minced garlic for 30 seconds until fragrant.
  4. Add cranberries, orange juice, zest, and honey/maple syrup. Bring to a gentle simmer for 5-7 minutes until cranberries burst and sauce thickens.
  5. Return chicken to skillet, add chicken broth, and cover. Simmer on low for 10-12 minutes until chicken is cooked through.
  6. Plate the chicken with sauce on top. Garnish with fresh herbs or extra orange zest if desired.
