- Prepare the brisket by rinsing under cold water to reduce excess saltiness. Pat dry and season all sides with salt, pepper, and thyme.
- Layer the ingredients by placing the seasoned brisket fat side up in the slow cooker. Add sliced onions and chopped carrots around the meat. Pour Guinness stout and beef broth over the top.
- Slow cook the beef on low for 8 to 10 hours, or until fork-tender.
- In the last hour, add chopped cabbage on top of the brisket and cover again.
