Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and gather your ingredients.
  2. Heat olive oil in a skillet over medium heat. Sauté diced onion and bell pepper for 3-4 minutes.
  3. Add chopped spinach and cook for an additional 2-3 minutes until wilted. Season with garlic powder, salt, and pepper.
  4. In a mixing bowl, whisk together eggs, milk, and cottage cheese until smooth.
  5. Stir in Italian seasoning and adjust salt and pepper. Fold in the cooled vegetable mixture and shredded cheese.
  6. Grease a 9-inch pie dish. Pour the mixture into the dish and smooth the top.
  7. Bake for 40-45 minutes, or until the top is golden and the center is set. Test for doneness with a knife.
  8. Let cool for 5-10 minutes before slicing. Serve warm or at room temperature.
