- Preheat the oven to 375°F (190°C) and prepare the baking dish by greasing it lightly.
- Peel and dice the potatoes into ½-inch cubes. Chop onion and mince garlic.
- Heat olive oil in a large skillet, add onion and garlic; sauté for 3-5 minutes until onion is translucent.
- Add ground beef to the skillet, season with salt, pepper, and paprika. Cook for 5-7 minutes until browned.
- Pour in beef broth and let simmer for 2-3 minutes until slightly thickened.
- Combine diced potatoes with the beef mixture, also fold in sour cream and half of the cheddar cheese.
- Transfer the mixture to the baking dish, top with remaining cheddar cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake for another 10-15 minutes until golden.
- Let the casserole rest for 10 minutes before serving.
