Directions
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or cooking spray.
- Blanch the asparagus in a pot of salted boiling water for 2-3 minutes until bright green and tender-crisp. Drain and transfer to ice water.
- Melt 4 tablespoons of butter in a medium saucepan. Whisk in 1/4 cup of flour to create a roux, then gradually stir in 2 cups of milk until thickened, about 5-7 minutes.
- Remove from heat and stir in 1 cup of cheddar and 1 cup of mozzarella until melted. Add 1/2 teaspoon of garlic powder and season with salt and pepper.
- Lay the blanched asparagus in the greased baking dish and pour the cheese sauce over it, ensuring it's well coated.
- Sprinkle breadcrumbs on top and bake for 25-30 minutes, or until golden brown and bubbly.
