- In a food processor, add the pitted dates, protein powder, and sunflower seed butter. Pulse until it forms a thick, sticky dough, about 2-3 minutes.
- Using a tablespoon, scoop out portions of the dough and roll into small balls, about 1 inch in diameter. Chill for 15 minutes if too sticky.
- Melt dark chocolate in a microwave-safe bowl or double boiler. Dip each bite into the chocolate and place back on parchment paper.
- Refrigerate for at least 30 minutes to allow the chocolate to harden.
