Ingredients
  

For the Noodles
  • 8 oz Chow Mein Noodles or thin yellow egg noodles or ramen cakes
For the Cooking Base
  • 2 tbsp Canola Oil or vegetable/peanut oil
  • 3 cloves Garlic finely minced
For the Protein
  • 1 lb Beef Mince (Ground Beef) lean beef
For Freshness
  • 4 stalks Green Onions white and green parts kept separate
For Additional Texture and Nutrition
  • 1 large Egg beaten
  • 2 cups Green Cabbage shredded
  • 1 medium Carrot cut into thin sticks
  • 1 cup Bean Sprouts store in water to keep crisp
For the Flavor Boost
  • 2 tbsp Light Soy Sauce or all-purpose soy sauce
  • 1 tbsp Dark Soy Sauce do not substitute with just dark soy
  • 1 tbsp Oyster Sauce or vegetarian oyster sauce
  • 1 tbsp Chinese Cooking Wine (Shaoxing) or mirin/dry sherry
  • 1 tbsp White Sugar adjust to taste
  • 1 tsp White Pepper or black pepper
  • 1 tbsp Cornflour (Cornstarch) for thickening sauce

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine light soy sauce, dark soy sauce, oyster sauce, Chinese cooking wine, white sugar, and white pepper. Whisk until well blended and sugar dissolves. Set aside portions for later use.
  2. Bring a large pot of water to a boil. Add chow mein noodles and cook according to package instructions for 4-5 minutes. Drain and rinse briefly under cold water.
  3. Heat a non-stick pan or wok over medium-high heat. Add canola oil, then minced garlic, and sauté for about 30 seconds. Incorporate ground beef and cook for 4-5 minutes until browned.
  4. Push the beef to one side and pour the beaten egg into the empty side. Scramble gently and mix with beef until just set.
  5. Stir in sliced carrots and shredded cabbage, cooking for about 1 minute until slightly softened.
  6. Add drained bean sprouts, prepared noodles, and remaining sauce. Toss for about 1 minute to coat and heat through.
  7. Plate the Beef Chow Mein, garnish with green parts of green onions, and serve immediately.
