Preparation
- In a mixing bowl, combine the cooked BBQ chicken, shredded cheese, chopped green onions, and chopped fresh cilantro. Stir well until all ingredients are evenly mixed.
- Take the tortillas and place two on a clean surface. Evenly distribute the BBQ chicken mixture over one tortilla of each pair, then top with another tortilla.
- Heat the olive oil in a large skillet over medium heat. Once the oil shimmers, carefully place one quesadilla in the skillet and cook for about 3-5 minutes until golden brown and crispy.
- Using a large spatula, delicately flip the quesadilla and cook the other side for an additional 3-5 minutes until golden brown and the cheese is bubbly.
- Once cooked, remove the quesadillas from the skillet, let them rest for a minute, and slice into wedges. Serve warm with dips like sour cream or extra BBQ sauce.

Notes
Use medium heat to avoid burning and ensure that the cheese melts properly. Customize with different fillings if desired.
