  • 3 tablespoons Sriracha Adjust to taste
  • 1 tablespoon Honey Maple syrup can be used for vegan option
  • 1/2 teaspoon Garlic Powder Fresh minced garlic can be used
  • 1/2 lime Lime Juice Fresh lime preferred
For Cooking
  • 2 tablespoons Olive Oil Can substitute with high smoke point oil
For the Bowl
  • 4 cups Mixed Vegetables Use seasonal vegetables like broccoli, bell peppers, snap peas, carrots, and zucchini
  • 2 cups Rice Can use white rice, brown rice, or quinoa

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together ½ cup of mayonnaise, 3 tablespoons of sriracha, 1 tablespoon of honey, ½ teaspoon of garlic powder, and the juice of half a lime until smooth and creamy.
  2. Take 1 pound of chicken breast and cut it into even 1-inch cubes. Season the chicken pieces generously with salt and pepper.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken cubes and cook them for about 6-8 minutes until golden brown.
  4. While the chicken is cooking, prepare your mixed vegetables by steaming or sautéing them over medium heat for about 4-5 minutes.
  5. Once the chicken is cooked, toss it in a bowl with half of the prepared Bang Bang sauce. Serve over rice with cooked vegetables and drizzle with remaining sauce.
